A tasty appetizer that is very popular on the island of La Palma.

Roasted cheese with Mojo Verde

Ingredients:
300 grams of smoked cheese from La Palma mojo verde (green mojo)

Direcctions:
Cut the cheese into two half centimetre thick pieces, Heat the two pieces of cheese in a non-stick pan. When browned on both sides, remove from heat. Pour mojo verde over the cheese and serve.

Wrinkled potatoes with Mojo
This is a very simple but tasty recipe. Potatoes are boiled, without removing their skin, in water with a lot of salt added (traditinally they were boiled in ocean water) so that the sking becomes wrinkled like the name indicates. They are served with mojo, either spicy or mild. In general, the wrinkled potatoes with mojo are serverd as an appetizeer or as an accompaniment to a main dish, whether meat or fish.

Preparation Time : 35-40 minutes

Ingredientss:
1 Kg. of small potatoes
1/5 kg. of sea salt.
1 slice of lemon
water

Elaboration :
Thoroughly wash the potatoes without removing the skins.
Place the potatoes in a pot with the salt and the lemon an cover them with water without exceeding therir height. Once cooked, remove the water and then place the pot on the stove again and heat the potatoes, moving them util they are dry (approximately one or two minutes).
Remove from the heat and cover the pot for a few minutes.
Lastly, place the potatoes on a plate and pour mojo over them.
